Sweet Potato Casserole
Serves 8-10
Ingredients
2 lbs. Sweet Potatoes, sliced 1/16 " thin
2 tbl. Garlic - minced
2 tbl. Thyme - fresh chopped
Quart Heavy Cream
2 Eggs
2 tbl. Melted Butter
2 oz. Parmesan Cheese - grated
2 oz. Gouda Cheese - grated
2 oz. Parmesan Cheese - grated
2 oz. Gruyere Cheese - grated
Salt and Pepper to taste
Port wine reduction
Directions
1. Heat butter in a heavy bottom sauce pan. Add garlic and thyme. Saute for 30 seconds
2. Add cream, salt, and pepper. Bring to a simmer whisking constantly.
3. Whisk in the eggs. Add potatoes, and 1/2 the cheeses.
4. Brush 1/2 pans with butter. Layer potato cream egg mixture with cheeses
5. Pour remaining cream over the potatoes. Top with cheese.
6. Bake at 325 for 45 minutes or until potatoes are tender.
7. Serve immediately.
