Pumpkin & Walnut Stuffed Turkey
Ingredients
- 1 cup chopped parsley
- 2 cups pumpkin meat
- 1 cup bread crumbs
- 2 eggs
- 1 tsp cinnamon
- 1 Tbsp Brown Sugar
- 1 Tbsp Salt
- 1 Tbsp black pepper
- 1 cup chopped walnuts
- 1 turkey breast
- 1 tsp olive oil
- 1/8 cup heavy cream
Directions
- Mix all ingredients in a bowl
- Stuff turkey with filling
- Dust outside with seasoning (cinn., pepper, salt)
- Sear in pan, each side
- Cook in 350 degree (convection oven - 30 minutes) (Standard oven - 45 minutes to 1 hour)
Cranberry Wild Rice Pilaf
- 1.5 cups uncooked wild rice
- .5 cups chardonnay
- 1/3 cup dried cranberries
- 1/2 cup onions (diced)
- 3 cups water
Ingredients
- Saute onions until sweat
- Add chardonnay and cranberries (cook down until clear)
- Add rice and toss until evenly coated
- Add water
- 350 degrees in oven for 30 minutes
Brown Buttered Green Beans with Orange Zest
Ingredients
- Zest of 1 orange
- Juice of 1 orange
- 1 oz butter
- 8 oz green beans (fresh or frozen)
Directions
- Brown butter
- Add salt and pepper
- Add green beans & toss
- Add orange juice and cook until evaporated
- Serve and garnish with orange zest
