Pumpkin & Walnut Stuffed Turkey and More

Pumpkin & Walnut Stuffed Turkey

Ingredients
  • 1 cup chopped parsley
  • 2 cups pumpkin meat
  • 1 cup bread crumbs
  • 2 eggs
  • 1 tsp cinnamon
  • 1 Tbsp Brown Sugar
  • 1 Tbsp Salt
  • 1 Tbsp black pepper
  • 1 cup chopped walnuts
  • 1 turkey breast
  • 1 tsp olive oil
  • 1/8 cup heavy cream
Directions
  • Mix all ingredients in a bowl
  • Stuff turkey with filling
  • Dust outside with seasoning (cinn., pepper, salt)
  • Sear in pan, each side
  • Cook in 350 degree (convection oven - 30 minutes) (Standard oven - 45 minutes to 1 hour)

Cranberry Wild Rice Pilaf
  • 1.5 cups uncooked wild rice
  • .5 cups chardonnay
  • 1/3 cup dried cranberries
  • 1/2 cup onions (diced)
  • 3 cups water
Ingredients
  • Saute onions until sweat
  • Add chardonnay and cranberries (cook down until clear)
  • Add rice and toss until evenly coated
  • Add water
  • 350 degrees in oven for 30 minutes

Brown Buttered Green Beans with Orange Zest

Ingredients
  • Zest of 1 orange
  • Juice of 1 orange
  • 1 oz butter
  • 8 oz green beans (fresh or frozen)
Directions
  • Brown butter
  • Add salt and pepper
  • Add green beans & toss
  • Add orange juice and cook until evaporated
  • Serve and garnish with orange zest
