Huevos Rancheros

Ingredients:
8 corn tortillas
2 cups cooked crumbled sausage
1 large onion, chopped
1/2 cup chopped green pepper
1 Tbl chopped garlic
10 eggs, beaten
2 cups reduced-fat milk
2 cups shredded Monterrey jack cheese
1 envelop taco seasoning
1/2 tsp kosher salt (if desired)
1/4 cup chopped green onion


Directions:
Pre-heat oven to 400°. In a bowl, combine cooked sausage, onion, green pepper and garlic. In another bowl, whisk together egg, reduced-fat milk, cheese, taco seasoning and kosher salt.

Arrange 4 corn tortillas in the bottom of a greased 13-in.x9-in. baking dish. Spread half the sausage mixture over tortillas. Pour half of egg mixture over sausage. Arrange remaining tortillas over the mixture. Repeat layering with sausage and egg. Sprinkle top with chopped green onion.

Bake, uncovered, for 35 - 45 minutes until lightly browned and center is set. Allow to rest 5 minutes before cutting. Yield: 10-12 servings.

Chef's Note: This casserole may be assembled the night before and refrigerated prior to baking.
